A Monster Cookie Recipe That’s More Sweet Than Spooky

Whether you’re looking for a way to use up all that leftover Halloween candy or just want a really good cookie with all the best mix-ins, recipe creator and Thrive Market’s Social Media Manager Alex Roberts thinks monster cookies are the perfect solution. These jumbo cookies are “monster” sized and full of peanut butter, rolled oats, chocolate candies, and pretzels. “The hodgepodge of ingredients comes together to create the perfect sweet and salty cookie!” Roberts says.

Monster Cookie Recipe

Total Time: 1 hour
Yield: 8 cookies

Ingredients:

¾ cup butter or coconut oil, melted
¾ cup brown sugar
⅓ cup sugar
1 ½ tsp vanilla extract
1 egg
½ cup creamy peanut butter
1 ¼ cups all purpose flour
¾ cup rolled oats
1 teaspoon baking powder
½ tsp baking soda
½ tsp sea salt 
½ cup Thrive Market Organic Chocolate Chunks 
¾ cup Unreal Chocolate Gems
1 cup pretzels, broken into bite-sized pieces

Instructions:

Combine melted butter, brown sugar, granulated sugar, and vanilla in a mixing bowl. Whisk in the egg and peanut butter. 

Add the flour, oats, baking powder, baking soda, and salt. Stir with a spatula until a thick dough forms.

Add the chocolate gems, pretzels, and chocolate chunks. Stir until combined.

Divide the dough into ⅓ cup portions. Roll each portion into a ball and place them on a plate. Cover and refrigerate the dough balls for 30 minutes.

While the dough is chilling, preheat the oven to 350ºF. Line a baking sheet with parchment paper. 

Place 4 cookies on a baking sheet and bake for 14-16 minutes (this recipe will require two separate baking sheets). Let cool briefly before serving.
